I would add, anything the Afghan Whigs ever did. Especially the Supremes' Come See About Me. Dropped it down into a minor key, amped it up, and really brought out the desperation in the song!

Chicago band The Good used to do a cool country-fied version of "Fat Bottomed Girls" in concert, and when they'd get to the "Get on your bike and ride" part, they'd tease the crowd with a "Do you want it bad enough?" taunt before launching into the conclusion of the song full-tilt Queen style. Fun stuff...

I've always been partial to Sting's version of "Little Wing", not because it's definitive or anything, just because it puts a different slant on it. Others of note:

Loud Family - "Back of a Car"
Todd Rundgren - "Two Little Hitlers"
Dyslexic Apaches - "You're The One That I Want" (yes, from Grease)
Dyslexic Apaches - "Grant Hart" (this was a great one. The Posies toured behind their 199? album Amazing Disgrace, which contained the aforementioned rocker. The Apaches arranged ahead of time to cover the Posies' own song during the encore. They kicked fucking ass, it was a showstopper, and the lead singer had so much chutzpah that he really took it over the top. Even the Posies were impressed.)
